Mis primeros cupcakes / My first cupcakes


Es la primera vez que hago cupcakes! Si bien son hermosos y en las fotos parecen el modelo perfecto, la crema que llevan por arriba me parece muy mantecosa, quizas porque nunca comi un cupcake realmente bien hecho o tal vez porque simplemente prefiero otros sabores.


Hace poco recibi un mail de la gente de "The Cupcake Factory BA" en Argentina porque querian promocionar sus cupcakes y su servicio de entrega a domicilio. Como estoy un poco lejos de Argentina... les propuse que se los mandaran a mi hermana y mi mama asi ellas podian ser mis ojos, bueno, mis sentidos. Confio mucho en su opinion asique me parecio una buena idea.


Las palabras de ellas fueron solo buenas con respecto a estos cupcakes. Nos mandaron unos cupacakes de lemon pie y parece ser que son todo un manjar! Ademas el packaging es muy lindo (gracias a mi hermana que saco las fotos al final de este post así pueden verlo bien). Tambien su sitio web es precioso y muy invitante. Los invito a que los prueben, yo por lo pronto estaré visitando mi tierra en diciembre-enero y no perdere ni un minuto para probarlos yo misma y contarles las delicias que pruebe!


Mientras tanto yo, invadida por una tremenda curiosidad "cupcakeistica", hice con mis propias manitos estos deliciosos cupcakes de chocolate y frosting de frutos del bosque. Y nada de manteca, encontré una receta genial que no lleva manteca, solo crema. A pesar de ser mi primera vez fueron realmente un éxito, RIQUISIMOS!!! soy modesta no? Humedos y bien chocolatosos ademas la deliciosa crema de frutos rojos le agrego el toque fresco y dulce. La combinacion perfecta, como cuando encontras ese par de jeans que encajan justo, no pasa seguido, no? A disfrutar!

It is the very first time I prepare cupcakes! I know that they look pretty, and in the photos they look like the perfect model but there is something about the frosting that is not convincing for me... I may not have eaten a very good one until now or simply I don't die for this extremely buttery flavour.
Some time ago I received an e-mail from "The Cupcake Factory BA" in Argentina because they wanted to promote their cupcakes and their delivery service. Unfortunately I live quite far away from Argentina now but I told them to send some to my mum and sister, I trust their opinion very much, they would be my eyes, well... my senses.


They both agreed that these lemon pie cupcakes they received where a real delicacy! And the packaging is so cute (thanks to my sister for taking the pictures at the bottom of this post so you can see it by your own). Their website is also very nice and very inviting. I can't wait to be back home this winter (here) / summer (there- in Argentina) to try them my-self!!  
On the meantime, overwhelmed by this cupcake-ish curiosity, I made my own. These delicious cupcakes are sooooo good! Although my first shot, it was much more than a success, am I modest enough?? Moist, pure chocolate taste and the berries frosting made them fresh and sweet. The perfect combination, like when you find that pair of jeans that really suits you, it doesn't happen so often, no? Enjoy!





Receta / Recipe 







Cupcakes: adaptado del libro de David Lebovitz ¨The Great Book of Chocolate¨
Precalentar el horno a 175°C y preparar un molde de12 muffins con papel para muffin o simplemente enmantecarlos y enharinarlos. 
Relleno:
Batir el mascarpone, el azucar y el huevo hasta obtener una mezcla homogenea. Agregar los pedacitos de chocolate cortados a cuchillo. 
Pasta del muffin:
Mezclar la harina tamizada con el azucar negra compacta, polvo de cacao, bicarbonato de sodio y sal. En un bowl aparte mezclar el agua, el aceite, el vinagre y la escencia de vainilla. .
Hacer un volcan con la mezclar de ingredientes secos y verter los ingredientes mojados en el centro mezclando hasta obtener una mezcla homogenea. NO MEZCLAR MUCHO. Este es el paso mas importante para obtener muffins humedos y blanditos. Si no estan seguros, es preferible quizas mezclar de menos que de mas porque de lo contrario los muffins no quedan tiernos.
Dividir la mezcla en los moldes de muffins y por arriba verter 2 cucharadas de relleno. Los muffins van a quedar completamente llenos, esta bien!
Hornear por 25 minutos en el centro del horno o hasta que esten doraditos. Dejar enfriar.
Conservar a temperatura ambiente en un recipiente cerrado herméticamente. Si le agregas el glaseado conservar en la heladera en un recipiente con tapa.

Glaseado de frutos del bosque: adaptado del blog yumsugar.com 
Mezclar las frutas con el azucar y cocinar a fuego medio pisando las frutas con un tenedor (como si estuvieramos haciendo un pure! pero cuidado que salpica!). Cocinar por 15 minutos. Cuando esta bien liquido agregar la gelatina y disolver. Retirar del fuego. Pasar la mermelada por un colador de agujeros finitos para descartar las semillas y las cascaras de las frutas. Debe quedar un jugo homogéneo y espeso. Refrigerar por al menos 5 horas (se puede dejar en la heladera hasta el dia después). 
Montar la crema con el azucar hasta formar picos firmes. Incorporar 1/3 de la crema en la gelatina de frutas y mezclar bien pisando con un tenedor la gelatina e incorporandola en la crema. Una vez que se observan pedacitos pequeños de gelatina y que la crema haya tomado un color rojo intenso agregar el resto de la crema y batir por unos minutos (NO con batidora electrica). Debe quedar una crema espesa, de un rosa  palido y con pedacitos chiquitos de gelatina. 


Terminacion
Llenar 2/3 de la manga pastelera con la boquilla que prefieras y decorar tus cupcakes (a temperatura ambiente) como mas te guste. Les aseguro que por mas que no les queden perfectos, su sabor si lo sera!

Cupcakes: adapted from ¨The Great Book of Chocolate¨ David Lebovitz
Preheat the oven at 175°C and prepare a 12-cup muffin tin with or without paper muffin cups. 
Filling 
Beat together the mascarpone, sugar and egg until smooth. Stir in the chopped chocolate pieces. Set aside. 
Cupcake batter:  
Sift together the flour, brown sugar, cocoa powder, baking soda and salt. In a separate bowl, mix together the water, oil, vinegar and vanilla. 
Make a well in the center of the flour mixture and stir in the wet ingredients stirring until smooth. This is the most important step (to my mind) to have a very moist cupcake. DO NOT overmix!! If you have a doubt it is better to still see some non disolved crumps instead of overmixing your batter. Otherwise you will end up with less than tender cupcakes. 
Divide de batter among the 12 muffin cups. Spoon 2 tablespoons of filling into the center of each cupcake. This will fill your cups completely, it's fine. Bake for 25 minutes in the center of the oven or until the filling is golden brown. 
You can store the cupcakes in an airtight container for 3 days. If you add the frosting, keep refrigerated. 
Mixed-berry frosting: adapted from yumsugar.com 
Combine the mix of berries (I used frozen ones) with the sugar and cook over medium heat. Stir the mixture while mashing the fruits with a fork until liquid. This will take about 10 to 15 minutes. Stir in the gelatin and dissolve. Remove from heat and sieve the resulting jam to get rid of seeds and skin. The remaining jam should be smooth and homogenous. Refrigerate for at least 5 hours (or overnight). 
Beat the heavy cream until stiff peaks are formed. Add 1/3 of the cream to the jam-gelatin mixture and blend it together, mashing the pieces of gelatin with a fork. Add the rest of the cream. The resulting cream should have tiny pieces of gelatin and it should look pale pink. 


To assemble
Fill 2/3 of a pastry bag with the tip you like the most and make the nicest frosting you can manage. If it is not nice, no worries... it will taste excellent anyways!

  4. Yo no soy amiga de los cup cake, pero te quedaron preciosos.
    Los que les enviaron a tu mamá muy bonitos, al menos la caja y todo el embalaje.
