¨Une fois par semaine¨

(English below) 

¨Una vez por semana¨  o  ¨Club tricot¨ es como bautizamos al grupo que formamos con mis vecinas, en el que claramente nos juntamos una vez por semana.... nada formal solo comemos y después tejemos... bueno charlamos, tomamos té, jugamos algún juego (ahora estamos fanatizadas con el Taboo, si en francés es diferente pero no soy tan mala), digamos que a veces tejemos. 

Mi polera / my sweater

Este martes nos juntamos en casa y el plan fue tejer gorritos para los bebés de Guatemala, una publicidad que Nat recibió de IKEA... es una buena excusa para tejer algo ya que después de mi polera, de la que estoy orgullosa, no tejí nada mas. 
Que cocino para las chicas? queria hacer algo rico y de esas cosas que te dejan bien satisfecha. Martes, empieza la semana y en ella el trabajo abunda. Llego a casa tarde. Horario Suizo de cena 19.30 hs. Que hago, que hago?
Algo que le gusta mucho a A. pastel de papas


Ok tengo la solución y todos los ingredientes en casa menos la carne, pero nada que no pueda arreglar una rápida pasadita por el supermercado. Es una receta fácil y muy criolla pero también muy adaptada a mi gusto. Aunque pensé toda mi vida que era una receta bien argenta, mis años en Suiza me demostraron lo contrario, hachis parmentier, lo conocen? nosotros lo conocemos como pastel de papas!!! si si acá existe y es muy rico y supuestamente es un plato tipico frances! mmmm. 


Al final no tiene importancia de donde viene, lo que importa es que es sabroso, calentito y bien contundente, ideal! Claro que ninguna cena es completa sin el postre, gracias Marion tu mousse estaba deliciosa.

¨Once a week¨ or ¨Club Tricot¨ is how we called the group in which me and my neighbors get together, obviously once a week... nothing formal we just eat and then we knit... ok ok we chat, drink tee, play some games (I like taboo and even though is in french I can manage!), let's say that sometimes we knit. 
This Tuesday was at my place and the plan was to make bonnets for the babies in Guatemala, a publicity from IKEA... ok it's a good excuse to start knitting something since after my sweater  I didn't really started anything new, and then if we actually get to help somebody, much better! 
So I asked to my-self, what can I cook for the girls?  it should be something good and that leave you satisfied! Tuesday, beginning of the week and loads of things to do at work. I will arrive home late and the Suisse dinner timetable is at 19.30 hs. Think think!
Yes! something A. loves! Potato pie!


Ok I have the solution and everything needed at home except for the meat but nothing that a quick stop by the supermarket cannot manage. This is an easy recipe and typical from where I come from but I have to confess that it is pretty much adapted to my taste... I have always thought that this recipe was Argentinian but guess what... do you know the hachis parmentier? we know it better as potato pie... and there it is, it is also supposed to be a typical french dish! mmm
Who cares where it comes from at the end? the important thing is that it is tasty, warm and ¨heart-filling¨, ideal! Of course no dinner is complete without the dessert, thanks Marion your mousse was delicious!!

Pastel de papa ¨a mi manera¨

1 kg papas
60 gr de manteca
1 taza de leche
1 aji chico (o medio grande)
2 cebollas medianas
2 huevos duros
700 gr de carne picada (buena calidad)
Caldo de verduras o de carne
Parmesano a gusto (para el gratinado)
Aceite de oliva
Epecias … muchas !   sal, pimienta, pimenton, comino, nuez moscada obligadas ! y/o la que te guste mas !

Aceitunas o pasas de uvas en la version original pero … no me gustan… por eso se llama a mi manera J

Para el pure de papas. Pelar las papas, cortar en trozos grandes y hervirlas a partir de agua fria (no te olvides de poner sal gruesa en el agua) hasta que esten blandas pero que no se deshagan.
Una vez hechas pisarlas hasta formar un pure.  Calentar la leche y 50 gr de manteca (el resto de la manteca reservala para gratinar). Estas cantidades son bastante personales, podes agregar mas o menos manteca y leche pero ojo ! si te gusta el pure blandito… no conviene mucho para el pastel, tiene que quedar un pure un poco firme. Una vez que todo este caliente y unido, agregar al pure de papas y mezclar, agregar sal (si es necesario) y mucha nuez moscada !

Para el relleno de carne : Cortar las cebollas y el aji en pedacitos chiquitos. Calentar una sarten alta o una olla (tene en cuenta que vas a poner 700 gr de carne dentro), poner dos cucharadas de aceite de oliva, dejar que se caliente un poco y agregar aji y cebollas.  Saltear hasta que las cebollas esten transparentes y agregar la carne picada a temperatura ambiente (asi larga mas juguito).  Agregar una taza de caldo bien concentrado (o diluir un cubito de caldo en una taza de agua caliente), la carne tiene que quedar como flotando en el caldo pero no como una sopa !!! el agua despues se va a evaporar de a poco. Agregar condimentos generosamente, sin miedo la carne absorve mucho asique dale nomas !! 
Cocinar unos 5-10 minutos al maximo, revolviendo para que no se pegue la carne en el fondo de la olla, y bajar el fuego. Agregar los huevos picados y si queres las aceitunas o pasas de uva. Cocinar unos 20 minutos, revolviendo cada tanto. Probar si esta bien de condimentos y si esta bien apagar el fuego y tapar. Dejar reposar.

Ensamblado : En una fuente de horno alta, poner una capa de pure, agregar el relleno de carne tibio y terminar con una capa de pure (mas generosa que la de abajo). Cortar el resto de la manteca en pedacitos y distribuirlos por la superficie del pure junto con parmesano rallado.

Poner en la parte media alta del horno precalentado a 220-230 °C  hasta que la superficie este dorada.  Servir caliente ! 



Potato pie ¨my way¨

1 kg potatos
60 gr butter
1 cup of milk
1 small red pepper (or the half of a big one)
2 medium onions
2 hard-boiled eggs
700 gr minced meat (of good quality)
Vegetable or meat stock
Parmesan to taste (for the gratiné)
Olive oil
Spices… many ! salt, pepper, pimenton, cumin, nutmeg mandatory ! and then whatever else you like

In the original version there are olives or dried raisins (depends if you want it sweet or not), but since olives are among the few things I don’t like… I don’t include them and that is why this pie is called ¨my way¨ J

For the purée : Peel off the potatoes, cut them into big pieces and boil them starting from cold water ( do not forget to put salt in the water) until they are soft, but be careful it is better if they don’t break. Once cooked, make the pure. Bring to a boil the milk and 50 gr of butter. These quantities are quite personal; you can either increase or decrease milk and butter but be aware that the purée shouldn’t be too much like a liquid. For the pie, it is better to have a firm purée.  Add milk and butter to the pure and mix. Add more salt if needed and nutmeg… a lot of nutmeg !!

For the meat stuffing: Chop onions and red pepper. Heat a big skillet (consider that you will add 700 gr of minced meat in it…), add olive oil and when it is warm enough add onions and peppers.  Sauté until onions become transparent and add the meat at room temperature (like this it will release its juice). Add a cup of very concentrated stock, meat should be kind of floating (without being a soup anyways…), the water will evaporate afterwards. Add spices generously because the meat will absorb a lot, so don’t be afraid and go for it ! 
Cook 5-10 minutes at maximum heat, stirring to prevent the meat from sticking to the skillet. Add the chopped eggs and if you wish the olives or raisins. Lower the heat and cook for another 20 minutes, stirring once in a while. Taste always taste !!!  If it is good remove from the heat, cover and let it settle for a few minutes.

To assemble, put in a layer of purée in an oven resistant skillet, the warm meat stuffing (not too hot) and finish by adding another layer of purée  (more in the top than in the bottom). Add the remaining butter into pieces all over the surface of the purée and the parmesan cheese

Put in the middle–high part of the oven at 220-230 °C until golden brown. Serve hot!
