Gumbo directo desde Luisiana / Gumbo from Louisiana

Este año, durante mis vacaciones en Argentina, finalmente conocí al novio de mi hermana. El chico americano del que les hable antes, Corey. Es un excelente cocinero y mi ultimisimo dia en casa cocinamos juntos. Desde que llegue que me queria enseñar a preparar este plato tipico de Louisiana, el gumbo. 

Sinceramente no es un plato muy veranil... de hecho es ideal para los dias frios y nublados ya que es calorico, sabroso y sobre todo lleva tiempo en la cocina para prepararlo. De todos modos el estaba tan entusiasmado con enseñarme a hacer el roux y yo tenia tantas ganas de aprender que lo hicimos igual. 
El gumbo es un guiso que lleva pollo, chorizo y camarones, aunque según el libro que me regalo Papa Noel Americano hay muchas variantes. Por ahora les muestro esta versión que es exquisita y que viene directo de las enseñanzas del abuelo de Corey, mucho mejor que una receta en un libro, bueno al menos tiene mas significado sentimental. 

El gumbo que les muestro ahora lo cocine una noche en casa, una de esas noches con -15°C que tuvimos la semana pasada. Agarre mi librito de notas con los consejos de Corey, el libro de cocina que me regalo y salió una cosa maravillosamente deliciosa. Sinceramente seguí mas las instrucciones de Corey que las del libro aunque algunos detalles que me parecieron que podían ser importantes los agregue... como por ejemplo, marinar el pollo antes de cocinarlo. O la cantidad de manteca y harina para el roux ya que Corey lo hizo bastante a ojo (según el... es arte!) y par decirles la verdad cuando cocino algo por primera vez necesito cantidades precisas... y ahí sale mi alma científica...


A pesar de que lleva mucho tiempo de cocción es un pato fácil de preparar, el único punto clave es el primero, el roux. Nunca lo había hecho antes y me parece que me estaba perdiendo de mucho! 
El roux es una salsa a base de ... grasa basicamente, yo lo hice con manteca, pero se puede reemplazar con aceite de oliva si lo quieren mas livianito. Yo preferi quedarme con al version de Corey, o mas bien, la de su abuelo, como me dijo él. Ya tendre tiempo de cambiar cositas. Les dejo la receta y espero que disfruten cocinando y sobre todo comiendo!

English version 

During my holidays back in Argentina, I finally met my sister boyfriend. The American guy I already talked you about a bit, Corey. He is a great cook and my very last day we made a very traditional Louisiana dish, gumbo.


It is a roux based stew with chicken, chorizo and gambas. Soooo good, warm and heart-filling or, like he would say... gorgeous! It was kind of hot to eat that on summer but he was so eager to teach me how to do the roux and I was so excited to learn about it that we made this dish very rich in taste and in calories. I made it again at home and it was perfect for the -15°C we had last week. I took my notes and the book Corey gave me for Christmas and the most amazing dish came out.

I followed more Corey's instruction than those of the book, I just added some tiny modifications that I thought could improve it. For example I marinated the chicken before cooking it and I made sure of the exact quantities of the butter and flour for the roux. He did it by eye (it's art according to him :)) but I need precision when I cook something at least for the first time... sorry it's my scientific side...

Although it needs long time to cook the actual difficulty of this stew is almost zero. The key step is the very first one, the roux. The roux is a mixture of flour with... fat basically, you can make it with olive oil and it will be lighter but I made mine with butter like he taught me to do, like his grand-pa used to do it. I wanted to cook it exactly the same way, once I do my first own gumbo I will have time to do some variations.

Juntada de blogueras / Blogger's gathering

Unas de las cosas mas lindas de toda esta historia del blog es el conocer gente nueva. Y si gracias a Dulce Pampa encontré un grupo de chicas muy agradable y divertido, ellas son Irene de Hands in Dough y Aida que fue una de las iniciadoras de Hands in Dough junto con Irene (aunque ya no ¨ejerce¨), Carmen de En modo food y Kako de En Guete! Nos esperaba Irene en su casa con una mesa armada de lo mas acogedora.


Nos la pasamos charloteando y por supuesto, comiendo! todo estaba muy rico. Empezamos con una  sopa increíble de Kako (ideal para el frio helado que esta haciendo estos dias) de peras y mostaza, un sabor nuevo para mi, me encanto! Después de la sopa vino la picada. Brusquetas de tomates deliciosos de Irene y no cualquier tomate ojo eh! con solo frotarlos en el pan se deshacen dejando una salsita increíble. Junto con el pan con tomate unos ajíes asados que estaban buenisimos!


También teníamos quesos, jamón (de los buenos!), ventresca y ensaladas. Todo era mas o menos livianito y tranquilo hasta que llegamos a los postres. Ni bien llegamos había una mesa dulce que parecía que era para 10 personas y encima agregamos cosas! 

Irene hizo cupcakes de mocha y de lemon curd, Carmen unas galletas ANZAC especiales para tener mucha energía y unos merenguitos. Aida preparo una exquisita Galete de Rois (y ademas gigante!!!) y Kako un roscon muy rico. Yo las quise agasajar con alfajores de maizena y marplatenses (la receta no la voy a poner hoy porque estoy esperando el momento indicado... suspenso...). 

Comimos hasta reventar, todo estaba especial y mi plato quedo limpito. Es la segunda vez que veo a las chicas y espero que haya muchas veces mas. Con ellas el tiempo pasa volando, aprendo muchas cosas y no solamente de cocina... nos divertimos comparando las diferencias entre los ¨distintos españoles¨ aaa siiiii la raíz es común pero las diferencias de cada país pueden ser muy graciosas. Y así con la panza llena y el corazón contento y también con una vianda importante, me volví a casa pensando en cuando será la próxima juntada. El desayuno del día después fue especialmente rico ;)

One of the most amazing things about having a blog is to meet people. Many people think that if you spend a lot of your time in the internet and having ¨e-relationships¨ it makes you have no real relationships at all. I say that this is completely NOT true and that it is even the opposite! Thanks to Dulce Pampa I met the most amazing girls. They have blogs as well,  Irene from Hands in Dough and Aida who was one of the initiators of Hands in dough although she no longer has a blog, Carmen from En modo food and Kako from En Guete!. Irene was waiting us at her place with the most welcoming table setted.

We spent the time talking and of course eating. For lunch we had an amazing soup made by Kako of pears and mustard. After the comforting soup we had bruscheta with special tomatoes from Irene's grand mother, just rub it over the toast and you have your tomato sauce ready! and with them some amazing roasted pepper.   

We also had cheese, ham (but the good one!), ventresca (or Bonito belly) and salads. Everything was soooo good! Anyway until now things were kind of light and easy.... the story has just began... desserts were the highlight of the day. When I came into Irene's apartment I saw a table full of sweet things and we still had to add more goodies... Imagine a sweet table for 10 persons but for 5 :) ooohhh yes heaven itself!


Irene had prepared mocha and lemon curd cupcakes, Carmen some ANZAC cookies, delicious cookies perfect for a hard training day and also some meringues. Aida made a gorgeous Galete de Rois and Kako a wonderful roscon (a large ring-shaped cake baked for Epiphany). And as for me, I wanted to surprise them with my typical chocolate and maizena alfajores  (I'm sorry that this time I will not include the recipe... It is not the right time... suspense :))


This is the second time we meet and I really hope to do this many times. With this girls time goes by unnoticed. I learn bunch of things with them, not only about food but about many other things. We laugh a lot together and I like it. I went back home with a full stomach and a happy heart... already thinking in our next gathering!

Esas cosas típicas de Mar del Plata (¨La Feliz¨) / Things about Mar del Plata (¨La Feliz¨)

Un pequeño paréntesis sin receta para mostrarles mi querida Mar del Plata. Ciudad sobre la costa atlántica de Buenos Aires, a 4 horas de La Plata (mi ciudad) y a la que visitamos cada vez que tenemos la oportunidad. Yo siempre la consideré como mi segunda ciudad, veranos e inviernos pasados con familia y amigas. Una ciudad llena de recuerdos hermosos. No por nada esta ciudad fue bautizada bajo el seudónimo de ¨La Feliz¨. 


Les quería mostrar las tres cosas mas típicas de Mar del Plata, seguramente se me escaparan muchas pero estas son las cosas que para mi son las que mas representan a esta hermosa ciudad. Mas alla de la playa y el maravilloso paseo de la costa, con el casino, casas de piedra y grandes edificios. Yo me refiero a cosas mas concretas. Por empezar en Mar del Plata hay Complejos Balnearios. 



Son complejos que ofrecen juegos, entretenimientos de todo tipo y sobre todo las típicas carpas. Todo alrededor de la costa, en el centro y en las afueras, carpas, de colores o blancas. Siempre me pareció algo descontado pero al ir a otras playas en otros países me percate de que las carpas no existen. Estas pequeñas casitas playeras, son por lo tanto la característica numero 1 de Mar del Plata.


La segunda particularidad de Mar del Plata es nada mas y nada menos que el viento. Si, quizas hay mucho viento en toda la costa atlántica, pero estamos acá y el viento nunca falta. Puede ser muy molesto pero las ¨casitas playeras¨ nos protegen. También puede ser muy aliviador cuando uno quiere disfrutar del sol sin estar ¨asandose¨ con el calor sofocante del verano. 


También es muy útil para los deportes acuáticos, pero eso lamentablemente no es una actividad que me quede muy bien... y aunque en las caminatas por el costa se nos vuelen los pelos para todos lados y nos quede todo enredado, muchas veces se agradece (para que quede claro, mucho calor suele ponerme un poco de mal humor). Y llegamos a la ultima, pero no por eso menos importante, real y autentica característica marplatense.... Los lobos marinos. Y esto no me lo estoy inventado, de veras que es re tipico! 

Tan típicos son que hasta es el emblema de la ciudad, con dos estatuas gigantes en la plaza principal (esa que se ve de fondo en la primera foto). Los lobos marino, y también los leones, estan todos agrupados en el puerto, ellos tienen su playa privada y tienen muy mal olor!!! es que el olor es tan típico como ellos mismos asique uno no se puede quejar mucho, si vas a ver a los lobos un pañuelo es casi obligatorio para taparte la nariz! (ademas acordarse del viento! el pañuelo también sirve para los hombritos). 


Y este es mi pantallazo sobre Mar del Plata, aunque hay mucho mas que eso. Hay mate en la playa, hay juego de paletas, playas amplias y laaaaargas, buenísimas frutas y verduras, cafecitos con memoria y.... muuuuuucha vida nocturna! Espero que los que no la conocen puedan ir a verla, es una ciudad maravillosa.

English version

Just a little break (from recipes) to show you my second home town. My beloved Mar del Plata is a city on the Atlantic coast of Buenos Aires and is 4 hours driving from my real home town (La Plata), which for us that means that it is quite “close by”. It is a city full of life and memories (at least for me…), many things lived there and many more to be lived. Who doesn’t like Mar de Plata? Not for nothing it is also called “La Feliz” (meaning literally “The Happy”).



What I intend to do here is to show you the 3 things that, for me, are typical from Mar del Plata. I have chosen these three because it really represents this city but of course there are so many other things! Ok ok… to the point. Characteristic number 1, in Mar del Plata there are Beach Complexes. They are like clubs that have games, shops, bars, etc but the most peculiar thing is that they have tents. All over the coast you can see thousands of them; it is part of the sightseeing. You have them in colors or in white, downtown or in more quiet and faraway beaches. Of course you can sit on the coast with your chair and parasol but the tent is a very comforting choice and it makes you want to stay in the beach the whole day!  These little beach houses are thus one of the things that make me think of Mar del Plata the most.




Distinctive number 2; in Mar del Plata there is wind! yeap, a lot of wind my friends. Well maybe this is something particular for the entire Atlantic coast but anyways it makes me feel in my second home town. To tell you the truth it can be really annoying when you are in the beach, but remember the tents… they can protect you and make you have a very pleasant time even though the wind is blowing hard. On the other hand it can be very nice when it is too hot! You can walk the coast, play paddle, etc without roasting! Besides it’s wonderful for those lucky people doing surf, kite-surf etc.



And we got to the last, but not least, typical thing about Mar del Plata. Here we can find loads of sea lions that, after searching in the web how it is called in English, to distinguish them from the normal seal, I found that they are actually called South American sea lions (Otaria flavescens). It is so common to see them that it is actually the symbol of Mar del Plata, you can even find two huge statues of sea lions on the big square on the coast (the one you see in the back of the first picture).



You can find them in the port; they even have a private beachJ  but… they smell soooo bad! Be prepared… is part of the show! So this is my overview of Mar del Plata. Of course there are so so many things I haven’t mentioned, like huge beaches, mate in the beach, coffees with memory and a lot but a lot of night life! I really hope you can visit Mar del Plata, it is really a wonderful city.
