Hamburguesas de otoño / Autumn Hamburgers

Ayer en el mercado era el festin de los champiñones, nunca había visto tantos!! tengo que admitir que me senti un poco abrumada por tanta elección, no sabia que comprar! Cuando veo hongos enseguida pienso al novio de mi hermana mayor, él cultiva una especie particular que no recuerdo muy bien su nombre... pero bueno es solo un detallecito.... 


Desgraciadamente todavía no lo conozco,  si hablamos algunas veces por skype pero ya saben... no es lo mismo. De todos modos esta situación se resolverá en Navidad que seguramente lo conoceré y quizás les cuente mas novedades... veremos... Este post es para él, porque los champiñones me hacen pensar en él y aun mas estos mismos, los chanterelles. Cada vez que hablamos me los menciona asique cuando los vi, ni lo dude, los compre enseguida. También compre unos que se llaman ¨pie azul¨ alguien sabe como cocinarlos? 


Como es americano lo primero que se me vino a la mente fue hacer hamburguesas!!! hamburguesas de pollo caseras, pancito con hierbas casero, cebollas caramelizadas y el toque magico, los chanterelles! En general cierro los ojos y trato de imaginarme como queda una combinacion de ingredientes determinada, esta parecia ser muy rica pero despues del primer bocado me senti en el paraiso! Ni siquiera me acerque con la imaginacion a cuan exquisita es esta hamburguesa en la vida real... y no exagero...






In English now
Yesterday the market was a real champignon feast, I never knew there were so many!! I was quite overwhelmed by so much choice... When I see champignons I think of my sister's boyfriend, he grows them although I don't really remember which one specifically... Unfortunately I haven't met him yet, well I talked to him by skype but... you know. I hope and think that this will be soon solved, at least I will hopefully meet him on Christmas time and then I will tell you more...

This post is for him, because champignons make me think of him and specially this ones, chanterelles, since he talked to me about these several times. I saw them there and so that was my first choice, I also bought ones called ¨blue foot¨, somebody knows how to cook them? 

Since he is American... I thought of doing hamburgers!!! home-made chicken burgers, with home-made herbs bread, caramelized onions and the magic touch, chanterelles!!! I usually close my eyes and think of how a combination of ingredients would taste like and this one seemed to be ok, but after the first bite I was in heaven. I didn't even get close with my imagination to how wonderful this hamburger is in the real life...

Canastas de espinaca / Spinach baskets

Como les conte en el post anterior, en nuestra increíble visita al Lago de Garda, cai en la tentación de comprar pastas de todo tamaño y color... Una de las pastas que mas me llamo la atención son estas que les muestro ahora. Son enormes!! cuando las vi enseguida pense que podría hacer con ellas. Se me ocurrieron pastas rellenas! después pensaría con que rellenarlas y como hacerlas, pero tenia que comparlas! 

De vuelta a casa, pense y pense y lo mas simple se me vino a la cabeza. Relleno de espinaca y ricotta. No solo es una mezcla simple de hacer sino que es exquisita. Me gusta en tartas, en ñoquis y como ven acá en rellenos. De paso aprovecho para mostrarles un poco de los pueblitos alrededor del lago, claro siempre con mis ojos.

No quiero aburrirles con mas historias del viaje, dejo que las fotos la cuenten solas, al fin y al cabo es una de las cosas que mas me gusta de la fotografia, su manera tan expresiva de contar una historia.
Peschiera
Bautice a estas pastas rellenas ¨canastitas de espinaca¨ y no creo que sea muy difícil averiguar por que! parecen canastas o no? Estas canastitas, ademas de ser encantadoras, son muy fáciles de hacer. Solo hay que mezclar espinaca con ricotta, rellenar las canastas y hornearlas unos 15 minutos. Lo mejor de todo es que llenan un monton, asique con poquito se puede hacer mucho.


Se pueden servir como primer plato en recipientes individuales, bien gratinaditos y recien salidos del horno. Con 3 por persona esta mas que bien. Si lo queres hacer como plato principal, 6 por persona me animaría a decir que es solo para glotones (como yo...) digamos que con 5 o 6 dejas contentos a todos! Ojo que no se endurezca la pasta mientras esta en el horno, pero aparte de eso, no creo que haya alguien a quien no se le abra el apetito cuando abras el horno y salga ese aroma tan invitante.  


Desenzano / Gardone
Espero que les guste y si no encuentran estas pastas en el super, animense con lasañas, conchiglie, canelones, y ese tipo de pasta.

As I told you before, in our lovely trip to Garda Lake, I found my-self buying pasta of every color and size… One of the pasta that captured me was this basket like huge pasta (well they are not that big but for being a pasta, they are !). When I saw them my brain started thinking what to do with them… Stuffed pasta of course... I would think about it more carefully back home, they were already in my bag…


Gargnano / Desenzano

Back home the simplest thing came to my mind. The stuffing would be spinach and ricotta. It is not only very simple to do but you can use it for many things, gnochi, pies and as you can see here, stuffing. I also wanted to share with you  some more photos of the villages around the lake.

Garda
I don’t want to bored you with more stories of the trip I will just let the photos speak for me. At the end this is what I like the most about photography, it is the most eloquent way of telling a story.


I called this dish ¨spinch baskets¨, easy no ? Don’t they look like basquets ? and besides being adorable they taste so good! Fill in the baskets with a mixture of spinach and ricotta, 15 minutes of hot oven and that’s it.  


You can serve them in individuals gratin dishes as a first dish (or not…) and I can assure you that with 3 or 4 per person you have more than a first dish. If you prefer to do a main dish with them think of 5 or 6 per person, they are heavy little things! When serving the pasta on a big gratin dish just be careful not to make the top of the pasta to dry, but appart from that… nobody will resist the inviting smell the minute you open the oven ready !!!!

Hope you like it and if you can’t find this pasta around the corner just try something else like lasagna, caneloni, conchiglie, and so on ! 





Receta / Recipe 




Pre-cocer la pasta en abundante agua salada. Quiere decir que la pasta tiene que estar dura, no llegar al dente. Esto es importante por dos motivos uno es que la pasta se termina de cocinar en el horno, el segundo motivo es el relleno, si la pasta esta dura es mas facil de rellenar sin que se rompa la canasta. Dejar que se enfria antes de rellenar.

Relleno: 
Picar una cebolla y saltearla con una cucharada de manteca a fuego medio-alto hasta que este transparente. Agregar la espinaca, sal y pimienta. Cocinar unos 3-5 minutos, retirar del fuego y agregar la ricotta y la nuez moscada. Mezclar hasta que todo este bien incorporado y se forme una mezcla cremosa. 

Enmantecar generosamente una fuente de horno (para gratinar). Agregar una cucharada de relleno en cada canasta, deben quedar llenos. Disponer las canastas una al lado de la otra en el plato, es tienen que tocar, bien apretaditas entre ellas. Verter la crema sobre las canastas y el queso parmesano. Cubrir con papel aluminio y hornear a 200°C (en horno precalentado) en la mitad del horno por 15 minutos. Sacar el aluminio y hornear 5 minutos mas. Servir inmediatamente. 


Pre-cook the pasta in abundant salted boiling water. It means that the pasta should not be ready, it doens’t have to be completely cooked. This is very important because of two reasons, one is that the pasta will be finish cooking in the oven and the second one is because you have to stuff them so it is better if it is still hard so the pasta don’t break. Let to cool down before stuffing.

Stuffing :
Chop the onion and sauté it in a table spoon of butter at medium-high heat until transparent. Add the spinach, salt and pepper. Cook for 3-5 minutes, remove from heat and add the ricotta and nutmeg.  Mix until well incorporated. It has to become a creamy stuffing. Taste and adjust the seasoning.

Butter generously a gratin dish. Add a spoonful of stuffing inside each basket. It has to be full.  Arrange each basket beside the other. They have to be tighlty close together. Pour the cream over the baskets and the grated cheese. Cover with foil and bake at 200°C in the middle of the oven (preheated) for 15 minutes. Remove the foil and bake 5 more minutes. Serve inmediatly.
