De Serbia con amor / From Serbia with love

La semana pasada una amiga de Serbia me dijo que venia a visitarnos. Trabajamos juntas por al menos 3 años hasta que el año pasado, para su gran felicidad, volvio a casa. Algunas cosas pasaron en el medio y ahora tiene ganas de venir a vernos. Todo esto hizo que me acordara de esta receta. Comi estos alfajorcitos dos veces, en ambas ocasiones fueron hechos por la mama de mi amiga y debo confesar que soy capaz de comerme miles sin parar. Tan sabrosos y suaves. Es como comer una galletita crocante y cremosa, se deshace en la boca. Fue amor a primera vista. Asi fue como intercambiamos recetas, ella queria la de las empanadas y yo la de los alfajorcitos! Trato hecho!

 
Este Domingo trabajé, de hecho el sabado también pero por suerte el domingo pude trabajar desde casa, lo que me permitio darme un gusto y cocinar. Eso hizo que trabajar un domingo caluroso y de sol no fuera tan horrroroso... en parte.
Este tipo de alfajores es muy simple de preparar y salen un monton a partir de una misma masa, son tan chiquitos, y lindos!! Pero cuidado! chiquitos, crocantes, suaves... eso significa manteca; y si... estos tienen una dosis de manteca considerable. De todos modos, despues de comer el primero ya no les va a importar y van a dejarse llevar y con mucho placer. Son ideales para una tarde de te, mate o café con amigas, lo que mas les guste!

Son fáciles de preparar, solo hay algunos secretitos a tener en cuenta (que valen para todas las masas con una cantidad de manteca generosa)
Secreto numero 1: no amases mucho la masa, van a perder la crocancia.
Secreto numero 2: pone la masa en la heladera por al menos dos horas antes de estirarla. Por dos motivos, uno, va a ser mas fácil de estirar sin que se pegue en todos lados y dos, van a coservar su forma cuando los pongas en el horno y al manipularlos cuando los pongas en la bandeja del horno. Por esta misma razón es importante que el horno y la bandeja estén precalentados.

Una vez fuera del horno, deja que se enfríen (si podes... para evitar lenguas quemadas, y te habla la voz de la experiencia -angurrienta!-) en una grilla y rellenalos con mermelada. Yo hice mitad con mermelada de damasco y mitad de arandanos. Me gustaron mas con la de damasco. Y un detalle solo para darle un toque final, los bañé con azúcar no refinada con rosas, un regalo divino de mi amiga Delfi.
Espero que disfruten de estos alfajores tanto como lo hicimos yo, A., mi compañeros de trabajo y mis vecinas.

Last week a Serbian friend of mine told me that maybe she would come to visit. We worked together for around 3-4 years until she left last year to go back home. Things happened in the middle and now she wants to stop by and say hello. This is why this recipe came to my mind! I eat these biscuits twice before, in both cases they were made by my friend's mother and I could eat thousands of them non stop! So tasty and smooth! It is like eating creamy biscuit, it was love at first sight. We changed recipes then, I gave her the empanadas one, that her mother wanted so hard and she gave me this one. The deal was closed.


I worked this Sunday, the whole weekend in fact. Fortunately I could work from home and do some cooking at the same time, so that working on a sunny and hot Sunday wouldn't be so terrific. These alfajores-like biscuits are very simple and you can have loads of them from one dough because they are so small, and cute! But... beware! there is quite a bit of butter on them, what were you expecting? smooth dough = butter. Anyways after eating the first you won't care anymore. They are ideal for an evening with friends with some tea, coffee or mate in between, whatever you prefer!
They are very easy to prepare, there are some secrets though that are true for most of the doughs with a generous amount of butter.

Secret number 1: do not work the dough too much, it will loose its crunchiness (if this word even exists ... NO) crunch (thanks Lau) otherwise.
Secret number 2: put the dough in the refrigerator for at least 2 hours before rolling it out on a floured surface. This will help you to roll it out easier and it will prevent the biscuit from loosing its form or spreading too much in the oven. For this same reason preheated the oven and the baking sheet.



Once out of the oven, wait for them to cool down (if you can... or you will burn your tongue and I'm talking out of experience...) on a wire rack and fill them with whatever you want! I did half with apricot and half with blueberry jam. I preferred the apricot once! Just for the fun I put some unrefined sugar with roses around them, a beautiful gift from a friend, thanks Delfi!
Hope you enjoy these Serbian alfajores as much as me, A. and my colleagues and neighbors did!

Receta

Para 50 unidades

225 gr manteca
50 gr de azúcar
1 huevo
1 yema
350 gr harina
100 gr de nueces trituradas (casi polvo)

En un recipiente grande (que te permita formar una masa) formar una crema con la manteca y el azúcar y agregar el huevo, incorporar. Aregar la yema, incorporar. Agregar el harina tamizada, las nueces. Mezclar con los dedos bien abiertos y amasar hasta formar una masa homogénea. NO amasar mucho!. Envolver en papel film y conservar en la heladera por al menos 2 horas.
Pasado este tiempo, estirar la masa en una superficie enharinada de un espesor de alrededor 10 mm. Yo los hice de 8 pero comparado a los originales me resultaron un poco finos. Deben ser entre 10 y 12 mm de espesor.  Formar galletas redondas con un molde, puede ser uno especial o un chupito por ejemplo, algo redondo.... Disponerlos en una placa de horno precalentado a 250°C. Hornear entre 10 y 15 minutos a 200°C. Retirar del horno antes que se doren, y disponerlos en una grilla para que se enfríen. Untar una galleta con mermelada a gusto (no mucho) y poner sobre la mermelada la segunda galleta. Mojar en mermelada los lados del alfajor resultante y espolvorear un poco de azúcar.

Recipe

For 50 units

225 gr butter
80 gr sugar
1 egg
1 egg yolk
350 gr flour
100 gr grounded walnut

In a big recipient mix the butter with the sugar until creamy. Add the egg, mix. Add the egg yolk, mix. Add the sifted flour and grounded walnuts. Incorporate the wet and dried ingredients with your fingers wide open and start working the dough (not a lot) to generate an homogenous one. Wrap it in paper film and keep in the fridge for at least 2 hours.
Roll out the dough on a floured surface until about 10 mm. I did them of about 8 mm but I think that the original ones were a little bit thicker. Try 10 or 12 mm. Make the cookies with either a round cookie cutter or a ¨shot glass¨, if you happen to have one...
Put the cookies on a hot baking sheet and bake in a preheated oven (at 250°C) at 200°C for 10 to 15 minutes. Take out of the oven before they become gold color and leave them to cool down on a wire rack.
Spread a little bit of the jam you like the most over one cookie and cover with another one making the ¨alfajor¨. Wet the sides with some jam and sprinkle with sugar.

Super Natural Cooking

Todos hablan de Heidi Swanson ultimamente y no los culpo! Yo también soy fan de su blog (101 Cookbooks) y caí en la tentación de comprarme sus libros de cocina y estoy de acuerdo con que son fantásticos! las fotos están buenísimas y las recetas mas todavía, ademas de sano, riquísimo y original. Debo confesar que lei sus dos libros como si fueran una novela, con todos los detalles!


La receta que les voy a mostrar hoy me lleva una vez mas a mi ultimo viaje a Argentina. Cada miercoles a la noche mis amigas se juntan a cenar y como esta vez yo también estaba ahí con ellas obviamente que me uni. Vinieron a casa y las quise agasajar con una cena rica rica. Como una de mis grandes amigas, Carla, es vegetariana (si, existen los vegetarianos en Argentina...), me pareció una ocasión ideal para poner en practica una de las recetas de Heidi, ya la había hecho en otra ocasión y me habia encantado y pense que les podria gustar a ellas tambien. Elegi una ensalada de cebada con queso feta y espinacas de Super Natural Cooking, para ese entonces todavia no había recibido mi copia de Super Natural Every Day si no hubiera dudado mucho porque cada receta de ese libro son una mejor que la otra...


La ensalada es facilísima, cebada (blé, farro, wheat), hojas de espinaca fresca, queso feta y piñones, pero lo que mas me gusta de esta ensalada es la vinagreta, jugo de limon, jugo de naranja, echalotte y aceite de oliva. Hice unas modificaciones en la version argentina ya que no encontre queso feta (lo reemplace por queso de cabra) y tampoco piñones. No son faciles de encontrar y si hay son extremadamente caros... agregue choclo para darle un ingrediente mas, y quedo riquísima. En realidad es una ensalada a la que le podes poner lo que se te ocurra, en mi opinion lo mas importante y original es la vinagreta.
Un dia mas en Argentina, y un paseo por el bosque con C, que lindos recuerdos, y solo paso hace poco tiempo...  extraño tanto!! en realidad quise ir a sacar fotos al bosque y C con el humor que la caracteriza a la fuerza me acompaño. La pasamos muy bien y despues vino tambien otra amiga, Nati. Se nos paso el tiempo asique volvimos rapidito a casa a cocinar y como siempre una vez mas haciendo las cosas a mil. Pero... quien te quita lo bailado!! (sonrisa)


Vuelta a casa y llegan las chicas y ya empezamos a charlar y picotear lo que tenemos delante, queso, tomates secos y otros... que hambre! La ensalada es muy facil y rapida,  tambien hice unas espinacas gratinadas riquisimas de Smitten kitchen, para probar!!! Todo estaba riquisimo y muy sano, me llenaron de cumplidos, gracias Heidi y Deb!
Como pueden ver en las fotos, la ensalada terminada no la pude fotografiar ese mismo dia porque fue todo muy rapido, teníamos hambre y entre charlas y vinito en el patio.... digamos la verdad... me olvide... Igual es tan rica y rapida que no me costo nada hacerla una vez mas entre A. y yo de vuelta a casa.

Everybody's speaking about Heidi Swanson these days and I don't blame them! I also bought my copy of her books and I am also a great fan of her blog 101 Cookbooks! her books are fantastics! photos and recipes are just perfect. I read both books like if they were novels, every single detail... how insane am I?
The recipe I will talk to you about brings me back, once again, to my last stay in Argentina.


My friends have dinner every Wednesday night and of course since I was there, I joined. They came home and I cooked for them and since my dear friend, Carla, is vegetarian I thought it would be The occasion to make them something from Heidi. And so it was, I made ... salad from Super Natural Cooking! I didn't have yet my copy of Super Natural Every Day by then, but recipes from this book are as good! I made this salad already once before for some friends and they and I loved it, why not making it for my dear friends back home? a very easy trade, barley, spinach, feta cheese and pine nuts; but the best thing is the vinaigrette, lemon and orange juice, shallot, and olive oil.
I made a modified version in Argentina since I didn't found feta cheese and pine nuts are difficult to find and expensive as well. I put goat cheese and corn instead and it was as good! In fact, I think you could put whatever you want in it and it would still be good, the vinagrette is really what makes the difference to my mind.
So another day in Argentina and I asked my friend C if she could come with me to make some photos in the forest before dinner. With her worst best mood she said yes and so it was, it was a lovely evening but of course time passed to fast and it was already late for dinner. Once again I will have to cook in a hurry...
Back home, the girls are all here and chatting and snacking begun, cheese, dried tomatoes, whatever, we were hungry. I made the salad in a few minutes and also the best baked spinach from Smitten kitchen! so good these spinach are!!! (I will not put the recipe since it is already in her blog, have a look). everything was very good and I received loads of compliments, thanks Heidi and Deb!
As you may notice, pics from the final results of the salad it was not done in the same occasion... everything was very fast, we were hungry and between chats and wine in the backyard... honestly... I completely forgot! ups. Anyway, it is so good and easy that it was no trouble to make it once again at home  just for A. and me.

Receta

Para 4 - 6 personas: nosotras éramos 6 y alcanzó muy bien!
La receta esta un poco modificada de acuerdo a mi gusto... pero casi nada eh!

Vinagreta citrica (según su autora original esta vinagreta es invernal pero a mi me gusto tanto que la uso tambien en verano... si quieren pueden adaptarla según la estación, solo limón y aceite de oliva mas frutas tipo frambuesas o frutillas pueden ser una opción)
1/2 naranja (jugo y ralladura)
1/2 limon (jugo)
1 cda de echalotte picado
1/2 taza de aceite de oliva extra virgen
sal y pimienta a gusto

Ensalada
2 tazas de cebada
3 ramos generosos de hojas de espinaca (bien lavadas)
1 taza de piñones tostados
1/2 taza de queso feta

Para que la cocción de la cebada sea mas rapida y que los granos queden mas gorditos y carnosos es preferible dejarlos en remojo al menos dos horas antes de ponerlos a hervir. Yo los puse a la mañana y la cocción me llevo solo 1/2 hora. En fin, hay que poner a hervir la cebada, con un poco de sal, a fuego medio-alto entre 1/2 o 1 hora (hasta que esten carnosos). Una vez ¨al dente¨ colarlos y probarlos de sal.
Pasar por agua fria para cortar la cocción y enfriarlos

Para hacer la vinagreta
En un recipiente con tapa (a rosca mejor) combinar los jugos de naranja y de limon y la cascara de naranja rallada. Agregar el aceite de oliva. Cortar bien bien chiquita la cebolla, cuanto mas chiquita mejor, que ni se note cuando la comas en la ensalada, solo que tome el sabor. Salar y salpimentar a gusto. Cerrar el recipiente y sacudirlo hasta que quede un jugo homogéneo.

Mezclar la cebada con la espinaca, los piñones previamente tostados (tostarlos en una sartén por unos minutos, que todos queden en el mismo plano sin que se superpongan), el queso y la vinagreta. Servir la ensalada fria.

Serves 4 to 6 persons: we were 6 and it was perfect.
The recipe is a little bit modified to my taste from the original one...

Citrus dressing
According to its original author this dressing is for winter, but I like it anytime! (you can of course adapt it to the season by adding other fruits instead of orange, always with lemon and olive oil plus some berries can be an option)
1/2 orange (juice and zest)
1/2 lemon juice
1 tbs minced shallot
1/2 cup extra-virgin olive oil
salt and pepper to taste

Salad
2 cups of soft wheat berries (blé in french)
3 generous handfuls spinach leaves (well rinsed)
1 cup toasted pine nuts
1/2 cup feta cheese

To shorten the cooking time of wheat berries and to have nice chewy ones, put them in water for at least
2 hours before boiling. I put them in the morning and in the evening it took me only half an hour to cook (if you use commercially available wheat follow the package instructions, no previous immersion in water is needed in this case). To make it short, boil the wheat berries in salted water form 1/2 to 1 hour and drain once they are ¨al dente¨. You have to taste them to know when is the right time! Rinse with cold water to stop the cooking and to cool them down if you are in a hurry (I like this salad served cold)

To make the dressing
Use a container with a lid (a screw lid if possible) and combine the juices and zest, olive oil, shallots well minced (you shouldn't feel the pieces of shallots when you eat the salad, just feel the taste) and salt and pepper to taste, Shake!!! until homogenous.

Toss the wheat berries with the spinach, toasted pine nuts (toast them by putting a single layer of pine nuts for in a pan in a middle high heat for a few minutes), feta cheese and dressing. Serve cold!
