Asado con amigas y tomates secos / Barbecue with friends and dried tomatoes

Antes de poner mis pies en Europa por primera vez no tenia ni idea de que la carne argentina era famosa. Cuando todos me decian de nuestra carne quede sorprendida y claramente enorgullecida (espíritu argentino)... aunque no entendia bien por que… Cuando probe la carne entendi mejor. Y sobre todo cuando intenté cocinarla yo misma... No digo que la carne en Europa sea fea, solo que no tiene el sabor criollo y si esta muy cocida hay que tener dientes bien fuertes... (exagero un poquito...). También la forma de cocerla es diferente. No existe la gracita crocante ni el ¨asado que sonrie¨ como bien me enseño el mejor asador del mundo (mi papi obviamente).


Hoy en dia el asado es una de las cosas que mas extraño de mi tierra. Motivo mas que suficiente para comerlo casi todos los dias cuando estoy en casa. Disfrutar cada pedacito, desde las achuras hasta el vacio y el asado. El lomo, el bife de chorizo, matambre, todo y cada cosa y sin salsa! Ninguna salsa por favor solo carne!! Ensalada aceptada y sobre todo con esos tomates tan sabrosos que la naturaleza nos da en esta epoca del año. Bueno ya casi que se termina la estacion de los tomates en el fin del mundo pero siguen siendo ricos ricos!

Hablando de tomates… de casualidad compre tomates secos en una dietetica para hacer una conserva, algo que solemos hacer con A. bastante a menudo con tomatitos traidos de sicilia. Los hice asi como asi y tanto a mi mama como a mis amigas les encanto! Asique aca comparto la receta con ustedes, es una receta de un libro de cocina siciliano que me regalo A. (autoregalo si los hay…) y resulta que cada uno que prueba estos tomates hidratados abre los ojos grandes grandes al descubrir tanto sabor en sus bocas.

Yo los encuentro increibles y se pueden comer con todo, desde un pedacito de pan hasta un asadito improvisado en la casa de tu amiga. Solo tenes que pasar el mal trago de hervir los tomates en agua y aceto balsamico… quema las fosas nasales… pero son unos minutos despues de eso, especias, ajo y aceite de oliva y es cuestion de tiempo. Si bien son mejores cuanto mas estacionados estén, no esta nada mal comerlos enseguida si sos de las que no pueden esperar.

Y asi fue, L. el novio de mi gran amiga Euge se ofrecio a hacer un asadito de departamento. Como negarse. Despues de un dia soleado de plaza y fotos con mi gran amiga Juli (y paimun); asado y ensalada de tomates en casa de euge y para empezar, quesito y tomates secos. Un buen helado y un partido de cartas después, a casa con la panza llena (y el corazon contento).

Before putting a step in Europe I never knew that Argentinean meat was kind of famous, every now and then I heard people saying how good was it and how precious… I was surprised but of course proud (argentinean spirit). Anyway, when I actually got to eat meat I understood what this entire famous thing was about… It’s not that it is bad; it’s just not the same thing. And when I tried to cook it myself it was even worst, and I soon understood why they commonly eat meat with some sauce or red but really red, not bloody-like, simply not cooked at all in the middle… there is no crunchy fat or the ¨smily asado¨ (like my dad used to say) (I will make a pic of it as soon as I have the opportunity).
Nowadays the barbecue is actually one the things that I miss the most from my land. Excuse good enough to eat it almost everyday whenever I’m back home.  Enjoy every little piece, from guts to steak. The lomo, bife de chorizo, matambre, everything! And without any sauce!!! Please no sauce just meat… salad more than welcome with these juicy tomatoes we found around here in this season. Of course that we are approaching the no-real-but-perfectly-red tomato but we still have good ones in the end of the world. MMM they are good!!
Speaking about tomatoes… just by chance I bought some dried tomatoes to preserve them in oil. We do this usually with A. back home with dried tomatoes coming directly from Sicilia and I rehydrated them following a recipe I got from a Sicilian cookbook that A. gave me as a gift (I always suspected it was and a gift for himself but I love it anyways). When my mom and friends tried them they absolutely loved them, and in fact anyone that tries these tomato goods are surprised to feel such a good flavor in their mouths. It is not like any dried tomato already prepared and preserved bought in the supermarket… well I also think that anything made at home is better that their commercial partner, don’t you?
I really think they are incredible and you can eat them with whatever you want, from a piece of bread to a barbecue in your friend’s apartment. You just have to support the smell of boiling aceto balsamico… it burns your nostrils!! But it just a few minutes and they are worthy of it! After that, oil, garlic and spices and its just a matter of time! The more you leave them in oil the better but if you are one of those that cannot wait, you can eat them right away!
And so it was… L., my great friend Euge’s boyfriend made a simple but great apartment bbq. How to say no… After a sunny day with my other great friend Juli (and paymun) in the park taking pics we went to Euyi’s place to eat meat! Cheese and dried tomatoes as starters, tasty but very tasty bbq with tomato salad and a good ice cream as dessert… a card game later and I am back home with a full stomach and a happy heart.

Receta

Para al menos 3 frascos de conserva

500 gr de tomates secos
4 dientes de ajo (depende el tamaño)
1 ramo de albahaca
1 ramo de perejil
Orégano, aji picante
Aceto balsamico
Aceite de oliva

Hervir los tomates con 1/4 de aceto y 3/4 de agua por poco tiempo, bastan 1 o 2 minutos. Secarlos bien con una servilleta absorvente y disponerl en una fuente de pared alta una capa de tomates, condimentar  con la albahaca y las demas especias y cubrir con aceite de oliva y un chorrito de aceto, repetir las capas hasta que se acaben los tomates. Un dia después rellena los frascos y asegurate que queden recubiertos en aceite.


Recipe

It makes 3 flasks

500 gr dried tomatoes
4 garlic cloves
1 bunch of basil 
1 bunch of persil
Origan and pepper
Aceto balsamico
Olive oil

Boil the tomatoes in 1/4 of aceto and 3/4 of water for not more than 2 minutes. Dry them in absorbent paper and arrange them in a skillet with high walls. Make one layer and add condiments, garlic, oil and a tablespoon of aceto. Repeat the layers. A day after fill in the flasks with the tomatoes and make sure they are covered in oil.

Crumble de Manzanas y un hermoso domingo / Apple crumble and a wonderful Sunday

Hola!! estoy de vuelta después de dos semanas de vacaciones en mi querida Argentina, en mi querida La Plata y en mi amado hogar. Unas vacaciones tranquilas donde lo mas importante era estar con mis seres queridos, empezando por mi mama! siguiendo por mis soles Agui y Santi y mis amigos. Lastima que mis hermanas no estaban pero ya habrá tiempo. Claro que no vi a algunas personas queridas pero eso lo dejo para Diciembre. Esta vez quería estar en casa, pensar, mimar a mama y estar en paz en ese lugar tan especial. Reconciliarme con la realidad, con el vacío que dejamos cuando no estamos mas (ufff va a ser difícil poner esto en ingles...).


En fin, llegue un sábado 26 de marzo, sol, una temperatura ideal y las amigas mas hermosas que uno puede tener me estaban esperando con un cartelito que decía AMALIA. Ellas incondicionales. Llamo a mama, llegue!! me esperaba con milanesas de pollo de la esquina (a pedido mío... como las extraño!!) y una tortilla de papas. Una bienvenida mejor que esta imposible!


Muero por ver a mi sol hermoso, a Agostina y tambien a su hermanito Santino, el diablillo mas lindo del mundo! Hijos de mi amiga Guada. Somos amigas desde muy muy chiquitas, todo empezó con un insulto cuando teníamos casi la edad de Agui ahora y siguió con muchos mas... pero con una gran amistad. 
Quedamos para almorzar el domingo. Recién llegada y con mil cosas que hacer (empezando por una siesta en el pechito de mamucha) compramos pasta, no puede fallar para los niños, y claramente algo rico de postre tenia que hacer... algo rápido, rico y que se coma con helado (otra vez para los chiquitos). Algo que empecé a hacer hace poco y que hago cada vez que estoy corta de tiempo, crumble de manzanas! 


La receta del crumble la saqué del libro de Narda Lepes, le agregué frutos secos bien bien picaditos y después a crear. Con frutas queda muy rico pero se puede hacer para cualquier cosa siempre que quieras un toque crocante en tus postres. Yo elegi las manzanas porque descubrí que me encantan cuando estan cocidas con muuucho azúcar. Y lo mejor de este postre es que se come calentito asique lo podes poner en el horno a ultimo momento y sacarlo unos 10 minutos antes de servir. Ven que es ideal para cuando no se tiene tiempo? 


Ademas es facilísimo, lo mas importante es que la manteca este fria helada casi congelada antes de poner en el horno. Para contarles rapidito (la receta completa la encuentran mas abajo) mezclan la misma cantidad de harina, azúcar y manteca bien fria y mezclan con la mano hasta formar un arenado. Lo pones en el freezer y mientras cortas las manzanas en 4 las pones en una fuente de horno con muuuucha azucar y canela, por arriba se esparce el crumble y al horno bajo por media hora. Facilísimo!!! Servirlo tibio y con helado de crema es la gloria!


Mientras hago el postre llega la familia Cordoba y empiezan los gritos, los abrazos, los besos y la alegria! A los niños les encanta meter la mano en todo y si cocinan ellos es mas facil que lo coman, asique ahi tenia a los dos enanos metiendo sus manitas (no tan limpias... no importa estamos en familia) en los últimos pasos del postre. Después a comer y a jugar! la casa se tiñe de color y se inunda de juguetes. Paimun (el perro mas hermoso y cariñoso del mundo) esta feliz, los nenes se asustan solo al principio pero ya lo conocen y aunque es gigante y bruto termina jugando con ellos y rompiendo todo al igual que un bebé. Hogar dulce hogar!



Hey I'm back after 2 weeks of vacations in my dear Argentina, in my dear La Plata and in my beloved home. It was a special vacation, different lets say. What I wanted to do mostly was to be with my beloved ones, beginning with my mom! My friends and Agui and Santi were also between those I really needed to be with. A pity my sisters were not there but we will have time and of course there are those that I couldn't see but I leave it for December, like I said there is time! This time I wanted to be ¨at home¨, just be with my mom, my dog, think, relax and get used to my reality and the emptiness left when we are not there anymore...
I arrived a Saturday 26th, the sun, a perfect temperature and the best friends one can have where waiting for me with a banner with AMALIA written on it. How unconditional they are. I call my mom, I’m here!!! She was waiting for me with chicken ¨ milanesas¨ (sorry I don’t really know the translation… it would be ¨suprême¨ in French … nor sure) and Spanish tortilla. A perfect welcoming!

I’m dying to see her, Agostina, my little sun and also her brother Santino, the most beautiful mischievous little boy. They are my friend Guada’s sons. We are friends since we were very very young, it all begun with an insult when we were almost Agui’s age and it went on with many more…. but with a great friendship.
We organized to meet on Sunday; they are coming for lunch. Just arrived and loads of things to do (beginning wit a nap with mommy), we decided to buy pasta, it cannot fail with the little ones, and of course I had to do something tasty for dessert… something fast and with ice cream for the kids. The weather allows… It’s been already a while that I do this dessert every time I want to do something quick and that cannot fail, apple crumble.
The recipe for the crumble is from Narda Lepes cookbook, I added nuts and almonds and then creation begins! With fruits it matches perfectly well but you can make this crumble whenever you want to give a crunchy something to your goodies. I chose apples because I love them cooked with a lot of sugar! And the best thing of this dessert is that you can eat it warm so no need to take it out of the ovens hours before you guests arrive, just 10 minutes before serving is enough!  Besides it is very easy, the most important thing is the butter; it has to be very cold all the time and frozen cold before putting the whole in the oven.
Just briefly (the recipe is below), you mix the same amount of flour, sugar and butter to form the crumble, you cut apples in fours, you add canella and sugar, crumble on top and it is ready to put in the oven! You serve it warm and with ice cream and it is heaven!
While I’m doing the dessert, the Cordoba family arrives and shouting, kissing and hugging begins, happiness. Kids love to put their hands everywhere and if they help you cooking they will for sure eat it afterwards (even if it is green…). So I had them both helping me finish the crumble with their little kind of dirty hands… (between us it doesn’t matter).
After that we were ready to eat and play! The house is filled with colors and drawn in toys. Paimun (the best dog ever) is happy, the kids are a little bit afraid of him at the beginning but they already know him and get soon used to him. Even though he is huge and clumsy he becomes one of them, like if he was a little baby too. Home sweet home!
